Celebration Chicken Salad

I fiddled with this recipe until I got it just where I like it. It’s a great dish year-round and works especially well for wedding and baby showers. There is something innately lady-like about chicken salad. Sometimes, I spoon it into sliced croissants. Other times, I serve it wrapped in large tortillas or lavash or on a simple bed of lettuce. Any way you choose, it’s delightful.

4 cups poached chicken 

1 cup mayonnaise

1 small onion, diced

1 cup celery, diced

2 cups red seedless grapes, sliced 1⁄2 teaspoon cinnamon

salt and pepper to taste

Step 1: Shred the chicken (or for a smoother texture, use a food processor).

Step 2: Mix the mayo, onion, celery, grapes, cinnamon, and salt and pepper together. Step 3: Combine with the chicken until evenly mixed.

RUTH’S PRO-TIP:

This recipe can be altered slightly to make a yummy curried chicken salad. Simply subtract the onion, celery, and cinnamon and add one healthy tablespoon of curry powder (or more to taste). Finish with a few tablespoons of sliced, toasted almonds.
