Creamy Boursin Tomato Pasta with Chicken Sausage

After spending the summer tending the garden, this is the time of year when we finally get to enjoy all of that beautiful produce. But if you've ever grown tomatoes, you also know there comes a point when you start wondering what on earth you're going to do with all of them!

INGREDIENTS

A little more than 1 pint cherry or small tomatoes

2 packages Garlic & Fine Herbs Boursin cheese

2 to 3 garlic cloves, minced

Avocado oil or olive oil, for drizzling

Chicken andouille sausage, sliced and cooked

About ½ box pasta

½ to 1 cup reserved pasta water, as needed

2 tablespoons cream cheese, optional

1 teaspoon Italian seasoning, optional

Parmesan cheese, to taste

Crushed red pepper flakes, optional

Fresh spinach, optional



Step 1: Preheat the oven to 375°F.

Step 2: Place the tomatoes in a baking dish. Add both packages of Boursin cheese and scatter the minced garlic over the top.

Step 3: Drizzle the tomatoes and cheese with avocado oil or olive oil.

Step 4: Bake for approximately 15 minutes, until the tomatoes are softened and beginning to burst.

Step 5: While the tomatoes bake, cook the pasta according to the package directions. Reserve ½ to 1 cup of the pasta water before draining.

Step 6: Slice and cook the chicken sausage.

Step 7: Remove the tomatoes and Boursin from the oven. Add the cream cheese and Italian seasoning, if using.

Step 8: Gently mash the tomatoes, then stir everything together until a creamy tomato sauce forms.

Step 9: Add the cooked chicken sausage and pasta. Toss until everything is well coated.

Step 10: Add reserved pasta water as needed to loosen the sauce and make it even creamier.

Step 11: Finish with plenty of freshly grated Parmesan. Add crushed red pepper flakes if you'd like a little heat.

Step 12: Serve warm.
