Crunchy Coconut Granola

Crunchy. Sweet. Savory. I like to always have granola on hand. It’s a great snack on its own while also being delicious topped on Greek yogurt or eaten as cereal. There’s no going wrong with this healthy, tasty treat.

1 gallon rolled oats

1 cup sliced almonds

1 cup pumpkin seeds

1 cup pistachios

1⁄2 cup flaxseed

1⁄2 cup chia seeds

1 cup shredded coconut

2 sticks butter

1 cup brown sugar

2 tablespoons cinnamon

1 tablespoon salt

1 cup honey

1⁄2 cup maple syrup

1⁄2 cup orange juice

4 tablespoons vanilla dash of nutmeg

Step 1: Preheat the oven to 275°F.

Step 2: In a large bowl, combine oats, nuts, coconut, brown sugar, cinnamon, nutmeg, and salt.

Step 3: Spread the oats and nuts combination onto a cookie sheet and toast in the oven for 30 minutes.

Step 4: Simmer the honey, syrup, butter, orange juice, and vanilla in a pot.

Step 5: Pour the oats and nuts back into the large bowl and combine with the wet ingredients, mixing well.

Step 6: Place mixture onto a lined cookie sheet.

Step 7: Bake for another hour, moving mixture around every 15 minutes.

Step 8: Once the granola is golden brown, remove from the oven.

RUTH’S PRO-TIP

I like to add dried fruit to our granola for added flavor! My favorites are cranberries, cherries, and apricots. *Remember, add the fruit after baking to prevent it from burning.
