Hillside Farm Peanut Butter Pie

Bob and I have a favorite restaurant where we spend many of our date- nights. Our favorite dessert there is the famous “Peanut Butter Pie.” On a whim, I decided to create my own version and present a slice of mine and a slice from the restaurant side by side in a blind taste test to the family. It was unanimous. Mine was better.Try it for yourself. Odds are, you’ll agree!

CRUST:

27 Oreos

5 tablespoons melted butter

Step 1: Crush the Oreos until they are fine crumbs. (I use a food processor.)

Step 2: Mix the Oreo crumbs with melted butter.

Step 3: Press the mixture into a pie pan.

Step 4: Bake for 10 minutes at 325°F. Step 5: Remove and allow to cool.

FILLING:

1 cup creamy peanut butter (I use Jiff, but any brand will work.)

 1 (8 oz.) package cream cheese, softened

1⁄2 teaspoon vanilla

1 1/4 cups powdered sugar

2 (8 oz.) tubs of Cool Whip, thawed

Step 1: Beat the peanut butter, cream cheese, vanilla, powdered sugar, and one tub of Cool Whip together.

Step 2: Pour into the cooled crust. 

Step 3: Spread the remaining tub of Cool Whip on top of the filling.

Chill the pie for at least an hour before serving.
