My Kids' Favorite Chicken

These twice-browned, bacon-wrapped, herby-cheesy, stuffed, baked chicken breasts are truly out of this world. My kids ask for them on repeat. Once you try them, you’ll understand why.

4 chicken breasts

1 package Boursin cheese

4 slices bacon

2 tablespoons butter

2 tablespoons olive oil

Step 1: Preheat the oven to 350°F.

Step 2: Make a horizontal slice through chicken breasts to 1⁄4-inch of the ends, creating a pocket.

Step 3: Melt butter and olive oil in a hot skillet.

Step 4: Brown the chicken 2 minutes on each side and move to a separate plate.

Step 5: Once cool enough to handle, spoon Boursin cheese evenly into the pocket of each chicken breast.

Step 6: Individually wrap each breast with a slice of bacon and secure with a toothpick if necessary.

Step 7: Place breasts back into the hot skillet and brown on both sides until bacon is crisp.

Step 8: Once browned, immediately slide the skillet into the oven for 30 minutes.

Step 9: Allow to cool 10 minutes before serving
