Chicken and Barley Soup

The great thing about my “Chicken and Barley Soup” is how comforting it is. Pairs well with a winter family night, snuggled on the couch.

8 cups chicken broth

8 cups cooked and shredded chicken breasts 

1 cup butter

3⁄4 cup flour

1 diced yellow onion

2 diced celery stalks

5 cups cooked barley

4 chicken bouillon cubes

1 1⁄2 cups heavy whipping cream

12 slices bacon, cooked and crumbled salt and pepper to taste


Step 1: In a large soup pot, melt 1⁄2 cup of butter.

Step 2: Sauté onions and celery until softened.

Step 3: Stir in the rest of the butter. When melted, stir in flour until a roux forms.

Step 4: Mix in heavy whipping cream until the roux thickens.

Step 5: Whisk in broth and bouillon cubes. 

Step 6: Add chicken, barley, bacon, and salt and pepper and heat through.
