Crispy Chicken Cutlets

Some nights, your kids just need an extra bit of happy. You know, something to make them smile. These “Crispy Chicken Cutlets” never fail to bring that dinnertime joy to my house. This recipe makes me happy too because oven fried chicken is so easy to clean up, and it’s a lighter alternative to its deep fried cousin.

6 chicken breasts

1⁄2 cup melted butter

1 clove garlic, crushed

4 teaspoons dijon mustard

2 teaspoons Worcestershire

11⁄2 cups bread crumbs

1 cup grated parmesan

1 tablespoon fresh parsley

Step 1: Preheat the oven to 350°F.

Step 2: Mix melted butter, garlic, dijon mustard, and Worcestershire sauce together.

Step 3: In a separate bowl, combine the bread crumbs with parmesan and parsley.

Step 4: Dip each chicken breast in the wet mixture.

Step 5: Dredge coated chicken breasts in the bread crumbs.

Step 6: Place on a lined and greased baking sheet.

Step 7: Bake 40 minutes.

RUTH’S PRO-TIP

I love to serve these cutlets with my “Vodka Marinara Sauce” over ravioli (P. 244).
