Perfect Protein Pancakes

A few years ago, I stayed at a lovely Bed and Breakfast, and they served a version of these fabulous protein pancakes. With Bob working on the property and the kids going from one swim meet to another, extra protein is always a plus. Regardless of the nutritional value, they are decadent and delicious on their own. You can feel good about serving these to yourself and your kids on those days when you need a little extra gas in your tank.

1 cup full-fat cottage cheese

1⁄2 cup flour

4 eggs

6 tablespoons melted butter (plus more for greasing the skillet).

Step 1: Melt the butter and let cool.

Step 2: Mix all ingredients (including butter) with an immersion blender until smooth.

Step 3: Spoon out a 1/4 cup of batter onto a hot buttered skillet (as many as you can fit and still flip easily).

Step 4: When little bubbles form on the top, carefully flip the pancakes and cook the other side until golden brown.

Serve with syrup of choice or powdered sugar. (I know, I know, it kind of ruins the “good for you” argument. You could always top with fresh fruit!
