Meatball Subs

There’s something so satisfying about making meatball subs entirely from scratch — no shortcuts, just real ingredients and a whole lot of flavor. These subs are packed with juicy, garlicky homemade meatballs, simmered in warm marinara, topped with melty mozzarella, and served on toasty Amoroso rolls.


INGREDIENTS

1 lb ground beef

1 egg

2 garlic cloves, finely chopped

1½ tsp soy sauce

1½ tsp red wine vinegar

½ cup shredded carrots

⅓ cup grated Parmesan

⅓ cup panko breadcrumbs

1 tsp salt

1 tsp Italian seasoning

Crushed red pepper flakes (a shake or two, to taste)

Amoroso rolls (or any sub rolls you love)

Marinara sauce (we used Rao’s)

Mozzarella cheese

Olive oil or butter (optional, for toasting rolls)

Step 1: Preheat oven to 425°F. Line a baking sheet with parchment paper.

Step 2: In a large bowl, add ground beef, egg, shredded carrots, Parmesan, and panko.

Step 3: Pour in soy sauce and red wine vinegar. Add chopped garlic, salt, Italian seasoning, and crushed red pepper flakes.

Step 4: Using clean hands, gently mix everything together just until combined — be careful not to overwork the mixture.

Step 5: Use a scooper to portion out meatballs onto the baking sheet. Then roll each one by hand to smooth and shape.

Step 6: Bake for 15–18 minutes, until browned and cooked through.

Step 7: While the meatballs bake, warm up your marinara sauce on the stove.

Step 8: Lightly toast Amoroso rolls (you can brush with olive oil or butter and toast under the broiler or in a skillet).

Step 9: Once the meatballs are done, add them to the rolls. Spoon warm marinara over top and layer on slices of mozzarella.

Step 10: Broil subs for 1–2 minutes, just until the cheese melts and bubbles.

Step 11: Serve hot and enjoy every bite.
